Corn Bread Crusted Smoked Oyster Stew

2nd Course
Caramelized Diver Scallop, Grilled Royal Trumpet mushrooms, Tartufo Oil, Tomato Tartare, Cauliflower Coulis

3rd Course
Grilled Spatchcock Squab on Cannelini Beans and braised Escarole greens
with Chicken Sausage.

4th Course
Panéd Buffalo Short Rib in Creamy Cheddar Polenta, “Red Wine” Demi Glace, Oven Roasted Tomato Coulis

Dessert
Spiced Apple Napoleon, Amaretto Caramel, and Black Pepper Crumble

Appetizer:
Stone Crab Claws served with an Herbed English Mustard Aioli served with two Champagne selections by Dexter

Soup:
Pumpkin and Coconut Soup scented with Lemon Grass and garnished with Red Chili seared Prawns

Fish:
Herb crusted Filet of Dover Sole stuffed with Seafood Mousse then broiled with Key Lime Butter and served on a bed of braised Leeks topped with a warm Yellow Pepper Puree.

Meat:
Bone in Veal Rib Chop marinated with Rosemary, grilled and served with fried Green Lentil Quinquinelles, Celery Root Puree and a Chanterelle Veal Jus Lie’

Dessert:
White Chocolate Mousse filled Puff Pastry served with a Fudge dipped Strawberry and Pineapple skewer.
